Serves 4

1 Green Leaf or Boston Leaf Lettuce, clean and chopped

1 cup of green cauliflower, cut into medium florets

½ cup of trimmed wax beans

½ cup of trimmed green beans

1 ear of sweet corn, shuck and corn kernels removed

2 strips of farm bacon

Handful of diced up garlic scapes

1 hard boiled egg, sliced

basil leaves, chiffonade

Champagne Vinaigrette

¼ cup champagne vinegar

1 tbsp shallot, minced

1 tsp Dijon mustard

1 tsp honey

½ cup really good olive oil

Sea salt and Fresh Pepper

In a medium bowl, add all ingredients and drizzle in olive oil and whisk until dressing is emulsified. Season with salt and pepper.
