Serves 4-6

8 oz. prepared hummus

1 tomato, diced

1 cucumber diced

½ cup plain greek yogurt

1/8 tsp sea salt

¼ tsp paprika

2 cans artichoke hearts, drained and chopped

2 roasted peppers (red and yellow), diced

¼ cup goat cheese crumbles

2 tbsp minced flat leaf parsley

1 box your favorite flatbread crackers

Oven: Turn your oven on to the broiler function.

On a sheet pan, place the peppers under the broiler about 6 inches away and broil until peppers are roasted all around. Cool, peel off skin and then slice and dice. Put aside in a bowl.

In a 8×8 square serving dish, spread the hummus evenly on the bottom. Sprinkle the diced cucumbers and tomatoes over top.

Dollop the yogurt over the vegetables and take a small spatula and spread gently all over. Sprinkle with salt and paprika.

Next, layer with some of the artichokes, roasted peppers and goat cheese.

Sprinkle with parsley.
