Stacked Pear with Bleu Cheese and Yogurt, Lemon Honey Dressing

Serves 2

2 bartlett pears, thinly sliced (using a mandoline)

¼ cup bleu cheese crumbles

2 tbsp pistachios, roughly chopped

Sea salt and cracked fresh pepper, to taste

For the dressing:

1/3 cup plain yogurt

1 ½ tsp lemon juice

2 tsp honey

Salt and pepper to taste

Using a mandoline, thinly slice pears

For plating, stack the pear slices one atop of the other

Drizzle on some honey, add bleu cheese crumbles and chopped pistachios

In a medium bowl, combine all the dressing ingredients and whisk until smooth

Drizzle on the yogurt dressing and add more honey, bleu cheese crumbles and pistachios.
